Who needs bread! My turkey un-sandwich is packed with all the delicious flavors of your favorite hero and none of the carbs! Gluten and dairy free.

Greek Turkey Wrap Low Carb

Most popular lunch? Sandwich. Hmmm… that’s a challenge if you’re trying to lose weight or have a sensitivity to gluten. Before you pack another salad or choke down a can of tuna, think beyond the bun! The stuff inside a sandwich is the real rock star, so let’s eat that stuff!

Ditch the bread and wrap your goods in the turkey (chicken, roast beef, etc.). Un-sandwiches are simple to make, taste delish, and are super portable. The flavor combos are endless. Today we’ll make Apple Gouda, Greek, and Sweet Avocado Un-Sandwiches.

Scrumptious ideas to fill your un-sandwich:

Avocado – perfect substitute for mayo

Veggies- matchstick carrot, tomatoes, lettuce, cucumber, bell pepper, etc

Cheese

Fruit – apples and grapes add a delicate sweet note

Bacon, pork or turkey

Breadless Sandwich Turkey Wraps

Dip or Dress Up

Rolls can be dipped in a dressing or mustard (best if you plan to take them to work). Or, drizzle your sauce over your veggies and roll it up. Some of my favorites are:

Ranch dressing

Mustard

Siracha

Balsamic Vinegarette

Olive Oil

Wing Sauce, Frank’s Buffalo Wing Sauce is my personal favorite

Mayo – try avocado mayo if you’d like a cleaner, sugar-free mayo

Un-Sandwich Basics

Start with two slices of turkey. Don’t skimp here, you need 2 slices to support the weight of the roll. If you plan on stuffing with lots of veggies use 3 slices of turkey.

 

Next, add your favorite ingredients. Stack from the end (don’t start in the middle). Wrap it up.

The Greek Un-Sandwich

The Greek Unsandwich

Serves: 3 rolls
Ingredients
  • 6 slices turkey (this will make 3 rolls)
  • 6 slices purple onion (more if you love onion)
  • 1/3 cucumber, sliced into matchsticks works best
  • black olives, just enough to place a few slices on each roll
  • 2 TBSP feta cheese, divide evenly between 3 rolls
  • 1/2 avocado, sliced thin
  • banana peppers, optional
  • lettuce
  • Greek dressing or olive oil
  • *All ingredients are optional. Add anything you love.
Instructions
  1. each wrap is 2 slices of turkey, 1 slice is not strong enough.
  2. layer toppings on each turkey base
  3. top with feta cheese
  4. drizzle dressing
  5. roll it up

The Sweet Avocado Un-Sandwich

The Sweet Avocado Un-Sandwich
Prep time:

Serves: 3 rolls
Ingredients
  • 6 slices turkey, you’ll use 2 slices per roll (1 slice is not enough to support the roll)
  • 1/2 avocado, sliced
  • cheddar cheese, 3 thin slices (1 per roll)
  • 1 Roma tomato
  • 6-10 grapes, sliced in half
  • 1 cup lettuce or several lettuce leaves (red leaf and butter work great)
  • 3 tsp mayo
Instructions
  1. Make 3 wrap bases, think of this as the bread. You’ll use 2 slices for each roll
  2. Cut 3 slices of cheese in half. place 2 pieces on each roll
  3. layer toppings
  4. roll it up

Grapes might seem weird, but don’t knock it till you try it. They add a sweet note to the roll. For those low carbers, there are just 6 grapes for a total of 2 carbs.

 

The Gouda and Apple Un-Sandwich

This one is my favorite! Apples and Gouda cheese are a marriage made in heaven! If you love sweet crunch use the entire apple, or use the remaining apple slices as a side.

Ingredients
  • 6 slices turkey, you’ll use 2 slices per roll (1 slice is not enough to support the roll)
  • 1/2 apple, thinly sliced (feel free to use the entire apple)
  • 3 slices gouda cheese
  • 1 Roma tomato, thinly sliced
  • 3 TBSP Balsamic vinegarette (or mayo, or any dressing you love)
Instructions
  1. each wrap is 2 slices of turkey, think of this as the bread
  2. cut 3 pieces of gouda cheese in half
  3. place gouda cheese on turkey
  4. layer on the toppings
  5. drizzle with balsamic vinegarette or mayo
  6. roll it up
